Vindaloo masala is a blend of spices used in Indian cuisine/mostly in Goa, particularly for making the spicy dish Chicken Vindaloo. Here's a simple recipe for making the masala blend:

Ingredients:

  • 2 tablespoons coriander seeds
  • 2 teaspoons cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dried red chilies
  • 1 teaspoon black peppercorns
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon cardamom pods
  • 1 teaspoon turmeric powder
  • 2 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 1/4 cup distilled white vinegar

Instructions:

  1. In a pan, dry roast the coriander seeds, cumin seeds, fennel seeds, mustard seeds, cumin seeds, dried red chilies, black peppercorns, cinnamon, cloves, and cardamom pods until fragrant, about 2-3 minutes.
  2. Transfer the roasted spices to a spice grinder or a blender and grind to a fine powder.
  3. Add the turmeric powder, minced garlic, grated ginger, and distilled white vinegar to the spice blend and grind until smooth.
  4. Transfer the masala to a airtight jar and store in a cool, dry place for up to 3 months.
