Ingredients:
- 2 tablespoons coriander seeds
- 2 teaspoons cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2-3 dried red chilies
- 1 teaspoon black peppercorns
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon cardamom pods
- 1 teaspoon turmeric powder
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1/4 cup distilled white vinegar
Instructions:
- In a pan, dry roast the coriander seeds, cumin seeds, fennel seeds, mustard seeds, cumin seeds, dried red chilies, black peppercorns, cinnamon, cloves, and cardamom pods until fragrant, about 2-3 minutes.
- Transfer the roasted spices to a spice grinder or a blender and grind to a fine powder.
- Add the turmeric powder, minced garlic, grated ginger, and distilled white vinegar to the spice blend and grind until smooth.
- Transfer the masala to a airtight jar and store in a cool, dry place for up to 3 months.
