Aloo paratha is a type of Indian flatbread that is stuffed with a filling made from boiled and mashed potatoes. The filling is seasoned with spices, such as cumin and coriander, and then wrapped in a dough made from wheat flour. The paratha is then pan-fried until it is crispy and golden brown.
For the dough:
- 2 cups whole wheat flour
- 2 medium-sized potatoes, boiled and mashed
- 1 teaspoon salt
- 2 tablespoons oil
- Water for kneading
- Oil or ghee for frying

- 1/2 teaspoon amchur (dried mango powder) (optional)

Instructions:
In a large mixing bowl, combine the flour, salt, and 2 tablespoons of oil. Mix well.
Gradually add water to the mixture, kneading the dough until it is smooth and pliable. Cover and let it rest for 30 minutes.
In a separate bowl, mix the mashed potatoes, salt, cumin powder, coriander powder, garam masala, amchur (if using), red chili powder (if using), and chopped cilantro to make the stuffing.
Divide the dough into 8 equal parts and shape them into balls.
Roll out each ball into a round disc, about 6-7 inches in diameter.
Place 2 tablespoons of the stuffing in the center of the disc.
Bring the edges of the disc together to seal the stuffing inside and form a ball.
Roll out the ball into a round paratha, about 6-7 inches in diameter.
Heat a non-stick pan over medium heat. Place the paratha onto the pan and cook for a minute until the bottom is lightly browned.
Flip the paratha and add a few drops of oil or ghee to the top. Spread it evenly with a spatula.
Flip the paratha again and cook for another minute until the other side is browned. Repeat this process for the remaining parathas.
Serve hot with your favorite chutney or pickle.
