Sorse Ilish is a popular Bengali dish made with Hilsa (also known as Ilish), a type of fish found in the waters of the Ganges, Brahmaputra, and Meghna rivers in the Indian subcontinent. Here's a simple recipe for Sorse Ilish in Bengali style:
Ingredients:
- 4 pieces of Hilsa fish
- 1 teaspoon of salt
- 1 teaspoon of turmeric powder
- 2 tablespoons of mustard oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 1 teaspoon of fennel seeds
- 1 teaspoon of coriander seeds
- 2 green chilies, chopped
- 2 medium-sized onions, sliced
- 2 medium-sized tomatoes, chopped
- 1 teaspoon of sugar
- 2 tablespoons of fresh cilantro, chopped.
Instructions:
- Clean the Hilsa fish and sprinkle salt and turmeric powder on both sides. Set aside.
- In a pan, heat the mustard oil over medium heat. Add the mustard seeds, cumin seeds, fennel seeds, and coriander seeds and fry until fragrant, about 1-2 minutes.
- Add the green chilies and sliced onions to the pan and fry until the onions are soft and translucent, about 5-7 minutes.
- Add the chopped tomatoes to the pan and cook until they have broken down and become soft, about 5-7 minutes.
- Add the sugar to the pan and mix well. Cook for another 2-3 minutes.
- Add the Hilsa fish to the pan, making sure it is fully covered in the sauce. Cover the pan with a lid and cook for 8-10 minutes or until the fish is fully cooked.
- Remove the pan from heat and sprinkle the fresh cilantro on top. Serve hot with rice or roti.
