Achar is a mixture of different herbs and spices which provides various health benefits such as aiding digestion, boosting immunity, improving gut health, and adding flavor to dishes. It also contains antioxidants, vitamins, and minerals.
Ingridients:
- 4 medium-sized raw mangoes
- 1 tablespoon of mustard oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of fennel seeds (saunf)
- 1 teaspoon of cumin seeds
- 1 teaspoon of fenugreek seeds
- (methi dana)
- 1 teaspoon of salt
- 1 teaspoon of red chili powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of sugar
- 1 teaspoon of amchur
- (dried mango powder)
- 1 teaspoon of asafoetida (hing)
- 2-3 dried red chili peppers
- Instructions:
- Wash the raw mangoes and cut them into small pieces, discarding the seeds and pits.
- In a large pan, heat the mustard oil over medium heat. Add the mustard seeds, fennel seeds, cumin seeds, fenugreek seeds, and dried red chili peppers and fry until fragrant, about 1-2 minutes.
- Add the mango pieces to the pan and mix well. Cook for 5-7 minutes or until the mango pieces have softened.
- Add the salt, red chili powder, turmeric, sugar, amchur, and asafoetida to the pan and mix well. Cook for another 5-7 minutes or until the mango pieces have fully absorbed the spices.
- Remove the pan from heat and let the Aam Ka Achar cool completely.
- Transfer the Aam Ka Achar to a sterilized glass jar and let it sit for 2-3 days to allow the flavors to develop.
- Serve the Aam Ka Achar as a side dish with rice or roti, or as a condiment with your favorite dishes.
