Ingredients:
- 1 pound ladyfingers (okra), washed and trimmed
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 green chili, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt, to taste
- 2 tablespoons vegetable oil
- 1/2 cup water
- Fresh cilantro, chopped, for garnish
Instructions:
- In a large pan, heat oil over medium heat.
- Add cumin seeds and wait until they start to crackle.
- Add the chopped onion, green chili, and grated ginger. Cook until the onions are soft and golden brown, about 5-7 minutes.
- Add the chopped tomatoes, cumin seeds, coriander powder, turmeric powder, garam masala, and salt. Cook until the tomatoes are soft and the spices are fragrant, about 5 minutes.
- Add the ladyfingers (okra) to the pan and gently stir to combine.
- Pour in the water and bring to a simmer.
- Cover the pan and cook until the okra is tender and the sauce has thickened, about 10-15 minutes.
- Serve hot, garnished with chopped cilantro, over steamed rice. Enjoy!
