how to make Chole Bhature?

 


Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 cup curd (yogurt)
  • 1/2 cup water
  • oil for deep frying

For the Chole:

  • 1 1/2 cups chickpeas (kabuli chana)
  • 2 medium tomatoes, pureed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green chili peppers, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • salt to taste
  • 2 tablespoons oil
  • 2 tablespoons chopped fresh cilantro leaves

Instructions:

  1. In a large bowl, mix the flour, baking powder, baking soda, salt, and sugar.
  2. Add curd and water, and mix until a smooth batter is formed.
  3. Cover the batter and let it sit for 2 hours.
  4. Meanwhile, prepare the Chole: Soak the chickpeas overnight, then pressure cook until soft.
  5. In a pan, heat oil and add cumin seeds. When they start to crackle, add the onion, garlic, ginger, green chili peppers and sauté until the onion turns golden brown.
  6. Add the tomato puree and cook until the oil separates.
  7. Add the coriander powder, turmeric powder, red chili powder, garam masala powder and salt, and mix well.
  8. Add the cooked chickpeas and enough water to make a thick gravy. Let it simmer for 10-15 minutes.
  9. In a deep frying pan, heat oil. Scoop spoonfuls of batter and deep fry until golden brown.
  10. Serve the Chole with hot Bhature, topped with chopped cilantro.
