Samosa is a popular snack in India and several other South Asian countries. It is a triangular-shaped pastry that is stuffed with a filling made from spiced vegetables, such as potatoes and peas, or meat. The pastry is then deep-fried until it is crispy and golden brown.
Ingredients:
- 2 cups all-purpose flour
- 2*1/2 teaspoon salt
- 3 tablespoons vegetable oil
- 4-6 tablespoons water
- 2 cups mashed potatoes
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon amchur powder (dried mango powder)
- 2 tablespoons chopped cilantro (green coriander leaves)
- Vegetable oil for frying
Instructions:
- To make the dough, mix the flour, salt, and oil in a bowl until it resembles breadcrumbs.
- Gradually add water little by little and knead the mixture into a smooth dough. Cover and let it rest for 30 minutes.
- In another bowl, mix the mashed potatoes, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, amchur powder, salt, and cilantro.
- Divide the dough into 12 equal portions and shape each portion into a ball.
- Roll each dough ball into a oval and cut it in half from the shorter side.
- Take one half and make a cone by overlapping and pressing the two straight edges after brushing some water on it . Fill the cone with the potato mixture.
- Seal the open edge of the cone by brushing some water on it and pressing the edges together.
- Repeat with the remaining dough and filling.
- Heat the oil in a deep pan over medium heat. Fry the samosas until they are golden brown on all sides.
- Serve hot with chutney or ketchup. Enjoy!
Tips:
- Should resemble like bread crumbs after mixing the flour.
- Add little by little water and make a stiff dough.
- keep oil temperature medium while frying.
- Take out the samosas when it starts to get golden brown.
