Gajar ka halwa:
A traditional Indian dessert made with grated carrots, milk, sugar, and a mix of spices and nuts. Here is a simple recipe to make it:
Ingredients:
- 4 cups grated carrots
- 3 cups full-fat milk
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 2 cardamom pods, crushed
- 1/4 cup chopped almonds
- 1/4 cup chopped cashews
- 1 tbsp raisins
Instructions:
- In a large saucepan, heat the ghee over medium heat.
- Add the grated carrots and cook, stirring frequently, for about 10 minutes or until the carrots are soft.
- Add the milk and continue to cook, stirring frequently, until the milk has been fully absorbed by the carrots, about 20-25 minutes.
- Add the sugar and continue to cook, stirring constantly, until the sugar has fully dissolved.
- Add the crushed cardamom, almonds, cashews, and raisins and mix well.
- Cook for a few more minutes until the mixture thickens and starts to pull away from the sides of the pan.
- Remove from heat and serve warm. Enjoy your delicious Gajar Ka Halwa!
Note: You can adjust the amount of sugar and spices to taste. You can also add other ingredients such as cinnamon or nutmeg for additional flavor.
