Ras Malai is a popular dessert in India and several other South Asian countries. It is made from a soft and spongy cheese ball that is soaked in a sweet, creamy sauce made from milk and sugar. The dish is often flavored with cardamom and saffron.
Ingredients:
1. For Chenna:
- 2 cups of whole milk
- 2 tablespoons of lemon juice
- 2 cups of water
- 1/2 cup of sugar
2. For Rabri:
- 2 cups of whole milk
- 1/2 cup of sugar
- 1/2 teaspoon of cardamom powder
- A pinch of saffron strands (kesar)
Instructions:
- To make the chenna, heat the milk in a heavy-bottomed pan until it comes to a boil.
- Stir in the lemon juice and let it sit until the milk curdles and separates from the whey.
- Strain the curdled milk through a cheesecloth, rinse with cold water and squeeze out the excess water.
- Knead the cheese into a smooth creamy dough, then form it into small balls.
- Boil the water in a deep pan and gently drop in the chenna balls. Cook on medium heat until they double in size (approx. 15 minutes).
- In a separate pan, heat the milk for the rabri until it thickens and reduces to half its original volume (approx. 45 minutes).
- Add the sugar, cardamom powder, and saffron strands to the reduced milk and stir until the sugar dissolves.
- Remove from heat and let it cool to room temperature.
- To serve, place the chenna balls in a serving dish and pour the rabri sauce over it. Chill in the refrigerator for at least 2 hours before serving.

- Use whole cow milk for Chenna and buffalo milk for Rabri.
