Ingredients:
- 1 pound boneless chicken, cut into bite-sized pieces
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 green chili, chopped
- 2 tablespoons vindaloo masala (store-bought or homemade)
- Salt, to taste
- 2 tablespoons vegetable oil
- 1/2 cup water
- Fresh cilantro, chopped, for garnish
Instructions:
- In a large pan, heat oil over medium heat.
- Add the chopped onion, green chili, and grated ginger. Cook until the onions are soft and golden brown, about 5-7 minutes.
- Add the chopped tomatoes and cook until they are soft and mushy, about 5 minutes.
- Stir in the vindaloo masala and cook until fragrant, about 2-3 minutes.
- Add the chicken pieces to the pan and gently stir to combine.
- Pour in the water and bring to a simmer.
- Cover the pan and cook until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.
